Season the skate wings and fry in hot oil on both sides for colour before finishing in the oven then rest them. Put the pan back on the heat, and add a good knob of butter. Let the butter foam and start turning black. Then add a squeeze of lemon, and 15 capers, let all the juices combine, season then pour the liquid over the fish.
